A veteran of HaBasta, Bar 51, and HaSalon, Chekin will serve up roasted wild mushrooms with potatoes, asparagus, and wild za’atar — a tribute to his father who took him foraging when he was little. “He taught me to love the sea and to love nature,” Chekin explains.
“We hiked through the entire country together. I remember that as soon as winter arrived, we would start waking up early on Saturday mornings and drive to the forest to pick mushrooms. This dish is absurdly simple, but against all odds, it is nothing short of perfect. It has nothing to do with cooking — my father didn’t cook. He would just put potatoes and mushrooms in a pan and there’d be magic.”
