Hilik Gurfinkel is a food writer for Calcalist, author of the bestseller “Culinary Journey: Mapa’s New Good Food Guide to Israel,” and leads market tours throughout Israel. Previously, he was an amateur hummus producer and the first chef at Shaul Evron’s celebrated (and now shuttered) Yoezer Wine Bar. Born in Tel Aviv, he has lived and loved the city for about 60 years.
