Adva Liani may prefer to stay behind the scenes, but the ice cream she produces at Eissalon deserves to be in the spotlight. Liani studied in Bologna, Italy and together with her partner Sion, they brought high-quality gelato to Haifa — some of the best in Israel. There are several fruit flavors including plum-mango sorbet, melon, and pineapple and banana gelato. These are served alongside other intriguing flavors like tahini and chestnut.
The duo designed Eissalon to feel like a cozy living room. Tucked away in a commercial center in a residential neighborhood far from the city center, its hidden location adds to its charm. Even now, with Eissalon ice cream available in Kfar Tavor and through deliveries nationwide, the original branch is still worth a visit.

She works closely with local farmers who provide Israeli fruits at their peak, transforming them into sorbets that showcase the true flavor. In the winter, you might find one of the shop’s signature flavors: avocado and oranges, which offers a delightful mix of tanginess and subtle creaminess,.”
