More and more productive micro-farms are appearing in the north of the country, implementing sustainable agriculture and growing produce year-round to support the local community rather than marketing their goods nationwide. This model enhances food security and creates reserves for small communities, promoting both sustainability and local self-sufficiency.

 

Esev Limon farm in the Bethlehem of Galilee moshav is one such farm. Run by couple Tamara and Gilad Goral, it offers seasonal vegetables to the surrounding community and plays a larger role in education. They host classes on-site, teaching growers from across the country how to create and maintain sustainable, productive vegetable gardens.

Culinary tour guide Shir Ben Muvchar explains: “At a time when the import of fruits and vegetables to Israel is rising, the model of a sustainable vegetable garden within small communities provides families with fresh, seasonal produce — grown without pesticides. This approach contrasts with industrial produce stored in cold rooms that lack traceability. Farms like Esev Limon offer consumers transparency about the origin of their food and support the continuation of small-scale, sustainable agriculture.”

 

On Fridays, Esev Limon hosts a produce market in their yard. You can find seasonal herbs and vegetables such as terra cotta tomatoes and corn in the summer, and beets and radishes in the spring.
