After studying in Bourgongne, France, Doron Rav Hon founded Sphera Winery in 2012 in the Judean Hills. Dedicated exclusively to white wines, Sphera focuses on creating clean, minimalist wines that highlight the complexity and depth of the fruit. The vineyards, located in the valleys of Givat Yeshayahu where the family also built their home, are managed using sustainable agricultural practices. They grow Chardonnay, Chenin Blanc, Sémillon, Riesling, and Roussanne grapes. Sima Rav Hon, Doron’s wife, manages the winery’s operations and warmly welcomes visitors, sharing the winery’s story with her signature smile.
Farmer Michal Havivian shares: “At Sphera Winery, it’s evident how integral the people behind the wine are to its creation. From their commitment to producing only white wines to choosing to live on the land where the vineyards are nurtured and aligning their lives with the rhythm of the vines, their personal investment is clear.
Visiting the winery and tasting the wine where it’s produced adds depth to its complex flavors. Through the clear glass, you can gaze out over the vineyards in the valleys of Givat Yeshayahu, renowned for their unique growing conditions that yield exceptional raw ingredients. It takes a skilled hand to bring out the best in them. The experience underscores that wine is fundamentally about connection: the meeting of soil with sediment, grape with winemaker, liquid with barrel, glass with food, and, most importantly, people gathering around the bottle to share it.”
