At first blush, Thinkers Distillery might seem like a gimmick. It’s co-owned by ultra-Orthodox and secular Jews, and produces spirits with water condensed from Jerusalem’s air that are packaged in bottles adorned with Talmudic verses and other Jewish symbols. But Thinkers’ gins, vodka, and bourbon are world-class distillates that have garnered awards in international competitions.
Established in 2018, Thinkers is a collaboration between local entrepreneurs and the startup Watergen, which is known for its innovative methods of producing water from humid weather. Thinkers operates within a beautifully designed space, tucked away in one of the most unsightly buildings on the outskirts of Jerusalem’s Mahaneh Yehudah Market — the Shukanyon, best known for the large parking lot beneath it. The distillery, along with its research and visitors centers, offers a unique glimpse into the local alcohol industry, making it a must-visit destination.
