Flavor: A Cookbook
“I have never been shy about my love of vegetables,” writes London-based Israeli chef Yotam Ottolenghi. “It’s become my mission to present vegetables in new and exciting ways and I have embraced it with nothing but enthusiasm.” Still, he wondered: How many more ways there are to cook plants? Many, he found to his delight. “Flavor” is the third book in his vegetable-forward series following “Plenty” and “Plenty More.” In this volume, Ottolenghi breaks down his cooking approach into three sections: process (how it’s cooked), pairing (its accompaniments), and produce, or the vegetable itself. He employs them in recipes like za’atar cacio e pepe, spicy mushroom lasagna, and Romano pepper schnitzel.
