In 1901 social services worker Lizzie Black Kander authored the first editor of “The Settlement Cookbook” and raised the $18 it took to print 1000 copies. The book became a near-instant success appealing to scores of new Jewish immigrants who were finding their way in the U.S. In addition to the nearly 500 recipes Black Kander included, there’s a chapter dedicated to “household rules,” like using a window box for keeping food cool, how to remove stains and use a “modern” gas range. Since its initial publication, more than 2 million copies have been sold and over 40 editions printed.
