Faloodeh Sib (Chilled Apple Drink With Rose Water)

Growing up, Israeli cookbook author Rottem Lieberson spent Rosh Hashanah with her grandmother Hanom, who emigrated from Iran in 1955. Hanom’s new year’s menu always included this cold drink made with grated apples, rose water, and lemon. If you prefer a spiked version, add ½ cup to 1 cup of vodka to the pitcher.

Place the grated apples into a glass pitcher, and add the rose water and sugar (if using), and enough water to fill up ¾ of the pitcher. Mix and place the pitcher in the refrigerator for at least two hours, and up to four hours.
Right before serving add the ice and lemon slices to the pitcher.
