Jerusalem: A Cookbook

Within Jerusalem’s boundaries, there are Jews, Muslims, Christians, immigrants, families who have lived here for countless generations, religious pilgrims, and curious tourists. Chefs Yotam Ottolenghi, who grew up in Jewish West Jerusalem, and Sami Tamimi who grew up in Palestinian East Jerusalem, explore the foods of their hometown in this intimate portrait of the holy city’s complex and diverse cuisine. Many of the recipes, like one for chicken with caramelized onion and cardamom rice, and another for lamb-stuffed quince with pomegranate and cilantro, call for long ingredient lists and a stop at a couple of stores to prepare, but are well worth the effort.
