Authors Ariel Rosenthal (known as “The Magician”, for his famous falafel spot in Tel Aviv), Orly Peli-Bronshtein (a recipe writer and culinary editor) and designer Dan Alexander, have collaborated with researchers, writers, photographers and chefs, to trace the journey of the most iconic and controversial legume of the Middle East, the chickpea. This journey took them to nine central cities between Cairo and Damascus – including Gaza City, Tel Aviv, Jerusalem, Nazareth and Beirut.
