The Palestinian Table

In her first book, award-winning Palestinian cookbook author Reem Kassis uses recipes as a way to explore and celebrate Palestinian culture, history, and the regionality of a complex and rich cuisine. She generously shares culinary knowledge from accomplished cooks in her family as well as experts in the community like Nuha, a woman in her father’s village who is known for her exceptional pastries and aniseed bread. Another recipe, this one for aubergine stuffed with lamb and nuts, comes from Kassis’s great-great-grandmother who emigrated from Syria. In her introduction, Kassis writes: “What ties all Palestinian tables together is more than just good food; it is the notion of ‘home’, the spirit of generosity, the importance of family, and the value of bringing people together.”
