Established in 2002, Tal and Nir Pelter quickly established their eponymous boutique winery as an important player in the Israeli wine scene that’s known for expertly capturing the essence of terroir. Situated in the north of the Golan Heights at an elevation of 1,000 meters, Pelter’s vineyards thrive in varying day-to-night temperatures and nutrient-rich basalt soil. Beyond the scientific elements of temperature, minerals, and altitude, terroir encompasses a broader definition here including history, human involvement, and cultural influences. Grapes including Barbera, Counoise, Cinsaut, and Cabernet Franc are harvested manually here for their kosher wines and the team also produces grappa, arak, and fruit brandies.

The winery’s visitor center, nestled within the production space next to fermentation vessels and barrels, has become synonymous with hospitality. Visitors can purchase a glass or bottle and enjoy it on-site with a platter of local goat cheeses, bread, and olive oil. On Fridays, Saturdays, and holidays, the winery’s kitchen hosts guest chefs — check the winery’s website for details.

“Pelter is a kind of insurance policy for me, ensuring that I’ve chosen or opened the right wine — whether it’s the Sauvignon Blanc, the light rosé, or the rightly celebrated heavier Cabernet Franc,” says Ruthie Rousso.
