Stop by the truffle stand at Cafe Asif to taste, smell, and learn more about truffles grown in the Golan Heights by the Israeli startup Ilsar. 

The natural growing areas of the French black truffles in Europe are shrinking every year and the demand far exceeds the supply. Thanks to in-depth research and tech developments, the local startup Islar has managed to grow truffles in the basalt soil of the Golan Heights. They hold promise for the local culinary scene, but also pose many questions about agritech and local food. 

The stall will be staffed by representatives from Ilsar who will talk about their developments and answer questions. You can also try out their truffles at Cafe Asif, which will serve two specials topped with shaved: bruschetta with scrambled eggs, and mashed potatoes with truffle aioli.
