Aromas of Aleppo: The Legendary Cuisine of Syrian Jews

In the mid-1970s, Syrian-American writer Poopa Dweck joined a group of cooks preserving the recipes from the Jews of Aleppo, a community that traces back to 586 BCE. “Most Syrian recipes were not written down; they existed only in the minds of older cooks,” Dweck writes. “My peers and I wondered whether our kids would follow our mothers’ and grandmothers’ approach to cooking and maintain the deep understanding of our unique customs.” Together, the group self-published a collection of recipes called “Deal Delights,” and two other volumes. In “Aromas of Aleppo,” Dweck builds on this work, bringing together a broad collection of recipes — including those for holidays like a 12-course Passover Seder — along with history and an explanation of customs that will resonate both with community members and outsiders.
