Delights of Jerusalem
Jerusalem’s small footprint contains a multitude of diverse religions and people. In the 1980s, Rina Valero visited many of the city’s denizens, capturing family recipes like those for celeriac soup, nut-filled pancakes called ataif, a Syrian dip called muhammara, and Palestinian makluba, an elaborate dish made with meat and rice. This hard-to-find book is a rare culinary treasure.
