In the introduction, chef Sami Tamimi and co-author Tara Wigley declare: “This is a book about Palestine—its food, its produce, its history, its future, its people and their voices. It’s a book about the common themes that all these elements share, and how Palestine weaves narrative and cooking into the fabric of its identity.” Tamimi and Wigley offer a powerful and intimate portrait of the cuisine Tamimi was raised on through recipes, essays, and transportive photos by Jenny Zarins. Recipes like stuffed turnips with turkey and freekeh in a spicy tamarind sauce and upside-down spiced rice with lamb and fava beans, take skill and time to prepare, and are particularly fitting for celebrations.
