Like all simple recipes with humble ingredients, the key to success with this one is quality, particularly of the wine vinegar, says chef Izhar Sa’ar from Rutenberg restaurant.

What do you do with the final product? Gently pour it over fish or roasted chicken — it’s even delicious sprinkled lightly over vanilla ice cream.

Ingredients

  • 1 handful of bitter orange blossoms (15-20 pieces)
  • About 2 cups /480 ml white wine vinegar

Preparation

  1. Place the orange blossoms into the container (make sure the flowers are cleaned of any ants or bugs) and pour vinegar over the blossoms until the top of the container is reached. Seal well and set it aside for 3 days at room temperature. Like other vinegars, this stores well for years.
