A Persian Kitchen (Mitbach Parsi)

Following her first book, “Mitbach Ishi” (“A Personal Kitchen”), in which she shared recipes from her private repertoire, Rottem Lieberson dedicates her second book to her childhood and the Persian recipes of her grandmother. Her goal is to preserve this knowledge for future generations with no shortcuts or substitutes. Persian cuisine, she says, is based on food that is passed down from generation to generation, and that is where its power lies. Some of the recipes are ancient. Lieberson adds a few personal innovations like a salad of tahdig, the prized crispy rice that forms at the bottom of the pot. In 2017, this book won third place in the “Asian Cuisine” category in the Gourmand World Book Awards.
