The introduction to this book by Ruthie Rousso — a lecturer, chef and culinary school graduate, journalist, and mom — is titled “Let’s Go Back to the Kitchen,” and she makes a compelling case for us to do just that. She writes: “These simple… are an excellent way to deepen — or begin — your journey into the kitchen… cooking is a power: the power to control one’s nutrition, sugar, seasoning, and additives, and also the power to feed not only the body, but also the mind. What should we make today? It doesn’t matter, as long as we do.”

The eight chapters of this book are reflect the essence of Israeli culinary identity. A whole chapter dedicated to the “Israeli Breakfast,” with different variations on shakshuka, expresses the deep passion of Israelis for the first meal of the day. Another chapter is dedicated to pasta, one of the most loved dishes in Israeli homes. The more festive, traditional recipes can be found in chapters such as “Old Wives Tales” and “Shabbat and Holidays.” Each recipe is preceded by a detailed introduction with personal or cultural background and important preparation tips.
