Scents and Flavors: A Syrian Cookbook
This cookbook by an unknown author, discovered in Syria, dates to the 13th century. The 635 recipes in this volume are written both in English and Arabic. The chapter order resembles that of a banquet, beginning with appetizers and drinks, moving on to main courses and side dishes, and finishing with the expected desserts section. The recipes are based on the ingredients that were prevalent at the time, making the book an important discovery in the research of food history and the culinary culture of the Middle Ages in the Middle East.
